How to Make
- Peel the fruits and cut them and the brown sugar into even slices about ½ inches thick. If using honey just measure out.
- Layer the cut slices in the jar alternating dragon fruit, lemon and sugar. The top two layers must be lemon with sugar on top.
- Seal the jar and label with the date.
- Place jar in a cool, dark spot. If you don’t have a good spot, you can also wrap the jar in an old shirt or blanket to keep it from being exposed to sunlight.
- After the first three or four days, gently shake the bottle to ensure even fermentation of all the fruits.
- Leave the jar to ferment for two to three weeks.
- Once the fruit mixture has set for a couple weeks your dragon fruit enzyme is ready to use. Strain out the fruit and store the liquid in an easy to use bottle, glass is best.
Precautions
There are two things to be careful of when making your dragon fruit enzyme at home. First, ensure that all of your materials are completely dry. A few drops of water in the mixture can ruin the results. Secondly, if you notice any black mold on the top of your mixture as it ferments, throw it out. It has been contaminated. Some people just scoop out the black mold, but it is best to just throw the whole batch out and start again.
