Wondering where cashews come from? They come from trees. That’s right. The cashew tree produces a flower which then develops into a fruit (also known as pseudofruit) that looks oval in shape. Within this fruit is a single seed which is also known as the cashew nut. This nut is surrounded by a hard shell which is removed while processing to liberate the nut. - The shell surrounding the cashew nut contains an allergic substance known as anacardic acid which is a skin irritant. This chemical is similar to the chemical found in poison ivy.
- The cashew tree is native to Brazil, but there are many cashew plantations in India, Southeast Asia and Africa. Thanks to the Portuguese who took the plant to these regions.
- The cashew plant has medicinal value too. The shell of the Cashew seed contains anacardic acids, which is used against tooth abscesses. The nut oil is used as an anti-fungal agent and for heeling cracked heels.
- The cashew fruit also known and the cashew apple is fermented and used as an alcoholic beverage, know as feni. This available in Goa, India.
- The ripe cashew fruit is delicious and can be eaten raw.

Cashew nuts contain 54% monounsaturated fats, 18% polyunsaturated fats, 16% saturated fat, 4% dietary fiber and 3% total carbohydrates.

Cashew nuts owing to their rich flavors are often eaten as they are. Some prefer to eat cashew roasted, slightly salted or sugared. A popular edible form is cashews covered in chocolate.
Cashews are excellent sources of protein and hence they form a staple in vegan diets. Many vegans like to grind raw cashews into milk which is also known as vegan milk or nut milk.
